I have the same problem w/ M$ Outlook. I use the OpenLDAP server in Linux, and
i set the loglevel to 

#       1 trace function calls
#       2 debug packet handling
#       4 heavy trace debugging
#      32 searchfilter processing
       ==
       39

All the output are catch be syslog. I'm not familar w/ Mac OS, but i thinks
you are also able to do logging in a textfile. Then you can check the searched
attributes.
