I am reading the man page for slapd as well as the admin guide, but I
cannot find anywhere that says how to use a directory vs a .conf file...

Chapter 5 of the 2.4 admin guide:

<http://www.openldap.org/doc/admin24/slapdconf2.html>

and

<http://www.openldap.org/software/man.cgi?query=slapd&apropos=0&sektion=0
&manpath=OpenLDAP+2.4-Release&format=html>

See the "-F" option

Also, you can use the slapdtest command to convert a slapd.conf file to a cn=config tree.

slaptest -f <conf file> -F <destination directory>

and then remove slapd.conf and just use slapd with the -F option.
