A couple of quick comments.
	2.1 is historic
	your ldapsearch was anonymous

I note that if the entry is returned at all, it's not an indexing
problem.  Attributes go missing most commonly due to access controls.
So, I suggest you first see what an ldapsearch returns when
authenticated as the rootdn.  If it returns the "missing" attribute,
then your problem is most certainly in your ACLs.  

Beyond that, I suggest you consider upgrading to at least the
latest stable release.
