ldapmodify / ldif / sizing

Hello,

I am a newbie with LDAP
I am under debian i386 with openldap2 2.0.23-3 

1- How to set the password for a tree(ldapmodify,ldapadd)?
my admin is:
cn=admin,dc=company,dc=com
It's pretty hard, because no more ldap.secret and rootpw!!!

I need a ldif with the command(ldapmodify,ldapadd)?

2- Where I can find all the options/caracteristic/fields available for a
entry, like phonenumber, email, ...?
I am using standart schema

3- For 100000 entry, which kind of server? I want to use with mod_ldap, and
like a company directory...
