For the record, I just run 

/usr/blah/slapd -f /etc/ldap/slapd.conf -d 5 >LOG 2>&1 &

which captures the debug output via explicit re-direction of the Unix STDOUT/STDERR streams.

Dunno if this'll work for OSX, but suspect that it will.
