You can grep through the source code for HAVE_CYRUS_SASL. slapd(8) certainly takes advantage, it is not just libraries and clients.

Any platform supported by autoconf should be supported for an OpenLDAP cross-compile. http://www.openldap.org/faq/data/cache/123.html might be part of the right idea.
