Most of your questions are actually not specific to
OpenLDAP Software but quite general in nature.  General
LDAP questions should be directed to a general LDAP
list.  See http://www.openldap.org/lists/ and the
FAQ for suggestions here.

The Admin Guide makes the assumption that one will
use at least some of user application schema defined
in the LDAP "core" technical specification, namely in
RFC 2256.   Hence, the phrase "extending schema".

Documentation in OpenLDAP Software generally assumes one
has a reasonable knowledge of LDAP/X.500 models, standardized 
schema (and/or the user application schema required by the
directory applications you intend to deploy), and other basic
knowledge of LDAP-based directories.  The General FAQ provides
some references which may be of interest to you and, of course,
general LDAP lists are a great resource for asking general
LDAP questions.
