So, as you told me, I tried to run the "db_recover -v" in my 2 database
directories (cf.
my slapd.conf)

There are corruption issues with BDB in earlier versions of OpenLDAP. Again, I strongly suggest you upgrade to OpenLDAP 2.1.22.
