The best thing to do is adjust your loglevel in slapd.conf. We run at 256, with a custom patch from Howard Chu to remove 2 empty logging lines per connection, giving us a total of 9 lines per connection. With a good gzip/bzip on the log file at the end of the day, it shrinks to a managable size.
