newbie question about setting accounts

I have very simple security needs.  I just want to associate a user to a particular sub tree in the DIT. I know that I can add the following to the slapd.conf for the root user.  

rootdn "cn=[NAME],dc=[MY-DOMAIN],dc=[COM]"
rootpw secret

But how do I do the same for a regular user?  Also how do I associate him to a particular node on the DIT?
