Doesn't that rather defeat the object of having a centralised
database of users?

If you really want to do this, you should look at using an automounter
(e.g. Amd or Automount). Give user home directories a logical name
like /home/<groupname>/<username> and then use the automounter to
manage /home - it can then implement different things on different
servers. The data to drive the automounter can be kept in LDAP (but
*not* in the user entries).
