Hmmm... I tried the following:

[gpoo@gpoo gpoo]$ ldappasswd -n -vvv -Y 8 -H md5 -D "dc=es"
New password:
Re-enter new password:
dc=es:{smd5}iGeUgKMFiS33SbfTOmzm1NFPS2WBE58k:javi

After that I modified my /etc/openldap/slapd.conf where says rootpw
#rootpw     secret
rootpw      {smd5}iGeUgKMFiS33SbfTOmzm1NFPS2WBE58k

Note that I used the option '-D "dc=es"' exclusively to get the
password printed on screen (with -vvv). Also, my rootdn is "o=ubiobio"
in my test machine. I can put anything on -D option with ldappasswd,
because I use -n option (not modify).

I restarted LDAP. Just for try:

[gpoo@gpoo gpoo]$ ldapsearch -D "cn=manager,o=ubiobio" o=ubiobio -W
Enter LDAP Password: javi
o=ubiobio
o=ubiobio
objectclass=top
objectclass=organization
