Multiple Instances of Daemon ?

I have two SCO boxes with openldap ver 1.1, which run one instance of
slapd and
a Linux box with ver 1.2 , which runs three instances of the daemon.
How do I control this feature. Is it compiled or configured?
Please point me towards relevant documentation.
