I think the openldap-general is more suited to documentation stuff,
anyway places to look, 
There is a book (check amazon) on LDAP
Netscape http://developer.netscape.com there is a very comprehensive
manual on their directory server there, (basically its the same in
theory)
for a getting started guide on openldap, the old UMICH site has a good
manual, which is a good starting point.
Other than that, man pages, faqs.....
As far as documenting the schemas, I'm working on it.....
